Organic Chicken and Roots Soup


1 beet

1 potato

1 carrot

1 organic chicken

1 packet of Vitality broth




In a stock pot, combine chopped up beet, potato and carrot and once the vegetables have simmered a bit, fill the stock pot ½ way with water


Boil the whole chicken for as long as you can. I did for 2-3 hours on low.


Shred the chicken in the broth, and take out the bones and other unwanted parts.


After about 25 minutes of simmering, add in 1-2 packets of broth depending on how concentrated you like your soup.


Let cool and serve with miso and a handful of super greens. It also tastes great with some added nutritional yeast and dulse.
