If you enjoy Macrobiotic recipes...this one will rock your world:) It is loaded with healing root veggies combined with seaweed and protein. I also added homemade horseradish as an extra boost! See below for horseradish recipe as well.
Ingredients:
1 medium size burdock root, grated
2 carrots, grated
1 leek, sliced thinly
1/2 bunch parsley, chopped
2 cloves garlic, minced
3 mushrooms, sliced
1/2” ginger root, peeled and minced
1/2 container tofu, cubed
25 g wakame or hijiki seaweed, pre-soak in water until soft
Coconut oil
1 packet Vitality Broth
Method
First Sauté leek, mushroom, garlic in 2 tbs coconut oil
Stir in parsley, carrot, burdock
Add 1 cup water
Cook for 5 minutes
Stir, add seaweed and 1 packet Vitality broth
Cook for additional 10-15 minutes
Serve and enjoy!
Horseradish Recipe
1 whole horseradish root, peeled and cut into 1" chunks
place in blender with 1/3 cup apple cider vinegar and 1/2 cup water...add more if needed. The consistency is thick, not watery.
Blend until smooth. This is very strong so be careful when you open the lid of the blender.
Use as a condiment on veggies, grains...whatever you like!
