Seared salmon with couscous and arugula dressing

Summer is here to stay! Enjoy a tasty, light meal perfect for hot evenings. 

Salmon - 
Avocado oil for cooking
2 salmon filets 
Vitality Beyond Broth 
Sea salt 

Heat the pan to medium heat and add oil. Rinse the salmon and coat in Vitality Beyond Broth and sea salt. Gently place in the pan and brown each side for 4 minutes each. 

Couscous - 
1 1/2 cup of water
1 cup of couscous
Pinch of salt 
1 TBSP oil 

Bring water, oil, and salt to a boil. Stir in the couscous and cover. Remove from heat and let steam for 5 minutes. 

Serve the salmon on top of the couscous, topped with arugula lightly dressed in balsamic vinegar. Enjoy!
